According to Fishwife’s website, the rainbow trout is raised on an Aquaculture Stewardship Council (ASC)-certified sustainable farm in Denmark. The fish is slow-smoked in small batches over beechwood before being packed by hand in extra-virgin olive oil, all in a “micro-cannery” near Copenhagen.
