If you’re anything like the staff at Simply Recipes, you’re buying way more cottage cheese than you used to. The craze has taken over our refrigerators, and while I’ve made pancakes (so good) and frozen treats (also great), I tend to fall back to a classic: cottage cheese toast.
I’ve gone through plenty of versions, but this pizza cottage cheese toast stays at the top of my list. It’s so quick and easy with the satisfying flavor of pizza—possibly my favorite food. Is it as good as a fresh slice of pizza? Probably not. But it’s much more weekday lunch-friendly. Plus, it doesn’t send me into a food coma and the protein helps keep me full for longer.
Beyond the requisite cottage cheese, I use chopped sun-dried tomatoes to add lots of saucy tomato flavor without adding liquid, parmesan for a punch of umami cheesiness, and oregano for classic pizza parlor flavor. A quick rub of garlic on the toast kicks it up a notch.
In eight minutes flat, you can have your very own pizza toast party of one.

Have Fun With Toppings
For a classic cheese pizza version, simply follow the recipe as-written. I like to finish with a little extra parm, a sprinkle of red pepper flakes, and a drizzle of olive oil or the oil from the sun-dried tomatoes. If I have basil handy, it’s going on top. But this is pizza, so you have options! Here are a few of my favorites:
- Sliced pickled peppers
- Sliced olives
- Pickled onions
- Cooked, chopped bacon
- Cooked, crumbled sausage

Pizza Cottage Cheese Toast
Ingredients

1 clove garlic

1 large slice sourdough bread

1/4 cup cottage cheese

1 tablespoon finely grated parmesan cheese, plus more for sprinkling

1 tablespoon drained and chopped sun-dried tomatoes in oil

1/4 teaspoon dried oregano

Olive oil, for drizzling

Optional toppings: fresh basil leaves, red pepper flakes
Method

Preheat:
If you’re using an oven broiler rather than a toaster oven, preheat on high heat with the rack about 4 inches from the element.

Prepare the bread:
Peel and slice the garlic clove in half. Rub the cut side all over the slice of bread.

Make the topping:
In a small bowl, combine the cottage cheese, parmesan, sun-dried tomatoes, and oregano. Stir to combine.
Spread the cheese mixture evenly on top of the bread. Sprinkle with more parmesan, if desired, and drizzle with a little olive oil.

Toast:
Place the toast in a toaster oven or on a foil-lined baking sheet under the broiler and toast until the edges of the bread have browned and the cheese is melty. This will take 2 to 6 minutes. Keep a close eye to ensure it doesn’t burn. Serve immediately.
