This time of year, I can’t help but have breakfast for a crowd on my brain. Between overnight house guests and brunch-y holidays gatherings, a morning meal that feeds plenty without too much effort on my part is exactly what I am looking for. Normally, my go-to is a frittata, but to be completely honest, I think my father and sister who stay with us are getting a little tired of it.

So I was thrilled to discover Simply Recipes’ most popular breakfast recipe: Spinach Florentine Breakfast Casserole. It’s a dream make-ahead situation that feels more special than most, which means I am absolutely joining you all in making it this holiday season.

Spinach Florentine Breakfast Casserole Is Easy and Elegant

Even at first glance, this casserole is a show-stopper. It features eggs, of course, but perhaps more importantly, a creamy combination of spinach, Parmesan, and mascarpone cheese. It’s all sandwiched between split English muffins in the baking dish so that when it’s pulled from the oven, the tops of the English muffins are puffed and deep golden-brown.

You’re able to serve each “sandwich” straight from the pan—though know that this is definitely a knife and fork situation, so have those handy.

A Breakfast That’s Better Made Ahead

The best part about this recipe is that it actually benefits from being prepared ahead of time. The assembled casserole needs to rest for at least an hour before baking to allow the English muffins time to soak up some of the eggy custard and soften. Conveniently, you can actually let it rest in the refrigerator for up to 12 hours before baking. Cover the baking dish and tuck it into the refrigerator before bed and all you need to do in the morning is turn on the oven and slide the casserole right in.

That’s something I can handle even before pouring my morning cup of caffeine! Put out a bowl of clementines or pick up some cut fresh fruit from the grocery store, make a pot of coffee, and breakfast is served.
